My (very limited) understanding is that there are severe restrictions on the way that things can be folded, ie. not all folded-up spaces are Calabi-Yau spaces. But, I don't know.

It is a space with complex dimensions that satisfies the general relativity equations. Mr. Yau has had ghost-written an easy-to-read book on all this that I recommend.
